4 Easy & Delicious Crockpot Recipes for Cozy Family Meals

Hello hello everybody! 👋 Welcome back to the blog — and a big welcome if you’re new here! Today, I’ve got four super easy and delicious crockpot recipes to share that are perfect for busy days, lazy weekends, or Sunday lunches after church.

These are some of my go-to comfort meals — simple, hearty, and made with love (and butter 😋). Let’s go ahead and get started!


🥩 1. Three-Packet Roast

If you’ve never tried the famous “three-packet roast,” you’re in for a treat. It’s tender, flavorful, and basically foolproof.

Ingredients:

  • 1 (2–3 lb) beef roast
  • 1 packet Au Jus mix
  • 1 packet Ranch dressing mix
  • 1 packet Brown gravy mix
  • 1 stick Butter
  • 1 cup Water

(Tip: I usually double this recipe when feeding a crowd — just double everything, including the packets!)

Instructions:

  1. Place your roast in the crockpot.
  2. Sprinkle all three seasoning packets over the top.
  3. Pour in the water around the sides (don’t pour directly on top).
  4. Add a stick of butter right on top of the roast.
  5. Cover and cook on LOW for 10 hours.

By the time it’s done, it’ll be fall-apart tender and full of flavor. I love serving this with mashed potatoes and sweet carrots for a full Sunday-style meal.


🥕 2. Sweet Glazed Carrots

This one’s a Southern favorite and so simple — just sweet, buttery goodness.

Ingredients:

  • 4 cans sliced carrots (drained)
  • ½ cup brown sugar per can
  • A good drizzle of corn syrup

Instructions:

  1. Add carrots to your crockpot.
  2. Sprinkle in the brown sugar and drizzle the corn syrup.
  3. Stir gently to coat.
  4. Cook on LOW for about 4 hours.

Once the brown sugar melts, it creates a sticky, sweet glaze that coats every carrot. They’re perfect for holidays or any time you want an easy side dish.

🥔 3. Crockpot Mashed Potatoes

Homemade mashed potatoes — creamy, buttery, and comforting — made right in your slow cooker!

Ingredients:

  • 5 lbs potatoes, peeled and chopped
  • Water (enough to cover the potatoes)
  • Chicken bouillon or broth
  • Salt, pepper, garlic powder, onion powder — season to taste
  • Butter
  • Milk or cream

Instructions:

  1. Add potatoes to your crockpot and cover with water.
  2. Season with bouillon, salt, pepper, and any other seasonings you love.
  3. Cook on HIGH for 4 hours or until fork-tender.
  4. Drain the potatoes, then add them back to the crockpot.
  5. Stir in warm milk and butter.
  6. Mash by hand (to protect your crockpot from cracking).

Top with extra butter before serving — because butter makes everything better! 🧈


🌮 4. Taco Chicken & Rice

This one’s a weeknight lifesaver — a creamy, flavorful taco-style chicken and rice dish that’s perfect with chips, tortillas, or by itself.

Ingredients:

  • 5–6 boneless, skinless chicken thighs
  • 1 can cream of chicken soup
  • 1 can Rotel (diced tomatoes & green chilies)
  • 1 packet taco seasoning
  • 2 pouches ready rice (plain or Spanish rice)
  • Optional toppings: shredded cheese, salsa, sour cream, queso

Instructions:

  1. Mix the cream of chicken soup, Rotel, and taco seasoning in a bowl.
  2. Place seasoned chicken thighs in your crockpot and pour the mixture over the top.
  3. Cook on LOW for 4–6 hours.
  4. Shred the chicken in the pot.
  5. Add in the ready rice (no need to preheat it). Stir well.
  6. Cover and cook an additional 20–30 minutes until thickened.

Top with cheese, sour cream, and a drizzle of queso — trust me, that’s the winner winner chicken dinner version. 🏆

🍽️ Sunday Lunch Spread

When I made all of these for a big Sunday lunch, we had:

  • The Three-Packet Roast
  • Sweet Carrots
  • Creamy Mashed Potatoes
  • Fresh Corn
  • Baked Mac & Cheese
  • Warm Dinner Rolls (with lots of butter!)

It was the perfect comfort meal after church — cozy, filling, and full of flavor.
