This recipe is one of my absolute all-time favorites — bold, savory, and full of flavor.

Ingredients:

  • 8–10 strips cooked bacon, chopped
  • ½ yellow onion, diced
  • ½ bell pepper, diced
  • 64 oz V8 vegetable juice
  • 32 oz bag peeled & deveined raw shrimp (tail off)
  • Salt & pepper to taste
  • Optional: 1 small can of tomato paste (to thicken)

Instructions:

  1. Pour the V8 juice into your crockpot.
  2. Add bacon, onion, bell pepper, and seasonings. Stir.
  3. Cook on LOW for 4–5 hours.
  4. One hour before serving, add the shrimp. (I used just over half the bag, but you can add all if you love shrimp!)
  5. If you’d like a thicker sauce, stir in tomato paste.

💡 To Serve: Spoon over warm white rice. The smoky bacon, sweet peppers, onion, and shrimp all blend together into the perfect Creole comfort dish!

🥬 2. Sausage, Potato & Cabbage Soup

This is one of those hearty “stick-to-your-ribs” soups, perfect for chilly fall evenings.

Ingredients:

  • 1 head cabbage, chopped
  • 8–10 small russet potatoes (or 5 medium potatoes), diced
  • 1 large carrot, sliced
  • 2 ribs celery, chopped
  • 1 rope smoked sausage or kielbasa, sliced
  • 1 Tbsp minced garlic
  • 6 cups chicken broth
  • 1 bay leaf
  • Salt & pepper to taste

Instructions:

  1. Place carrot, potatoes, cabbage, celery, and sausage into the crockpot.
  2. Add broth, garlic, bay leaf, salt, and pepper. Stir well.
  3. Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
  4. Remove bay leaf before serving.

✨ Pro Tip: Use smoked kielbasa for the best flavor — the chicken sausage version was just “okay.”

🥔 3. Four-Ingredient Potato Soup

This is one of the easiest crockpot soups ever — creamy, hearty, and budget-friendly.

Ingredients:

  • 4 cups chicken broth
  • 2 lbs frozen cubed hash browns
  • 1 can cream of chicken soup
  • 1 block cream cheese
  • Optional toppings: bacon, shredded cheese, green onions

Instructions:

  1. Place broth, hash browns, and cream of chicken soup in the crockpot.
  2. Cook on LOW for 6 hours or HIGH for 3–4 hours.
  3. About 30 minutes before serving, cut the cream cheese into chunks and stir into the soup. Let it melt completely.
  4. Stir well and serve hot.

  • 1 whole spaghetti squash
  • 1⅓ cups water
  • 1 lb ground beef
  • 1 jar pasta sauce
  • 1 cup shredded mozzarella
  • Parsley, salt, and pepper to taste

Instructions:

  1. Place whole spaghetti squash in the crockpot. Pierce with a knife several times.
  2. Add water, cover, and cook on HIGH for 5½ hours or LOW for 7–8 hours.
  3. Just before squash is ready, brown your ground beef. Stir in pasta sauce and heat through.
  4. Cut squash in half, scoop out the seeds, and shred with a fork.
  5. Top squash halves with meat sauce, mozzarella, and parsley. Bake at 350°F for 10 minutes until cheese is melted.
